My healthier version of Spring rolls

As an ardent fan of Indo-Chinese cuisine, spring rolls are my top choice after dim sums when it comes to starters. However, the deep-fried version isn’t something I indulge in frequently—it’s a bit of a guilty pleasure. That’s where this recipe comes to the rescue! Baked instead of deep-fried, and using rice flour wrappers instead of all-purpose flour, this version is a healthier twist. The stuffing is versatile, allowing you to customize it to your taste. I’ve tried it with chicken and cottage cheese so far, and next up is a delicious egg filling for an eggitarian friend. Today, I’m sharing my current favorite stuffing, which is an absolute hit with the kids!
Ingredients
- Rice Papers sheets – 8
- Boiled Boneless Chicken – 250 gms
- Fresh Green Coriander – 1 cup
- Green Chilly – 2
- Garlic cloves – 2 big
- Soya sauce – 2 tbsp
- Salt to taste
- Olive Oil – 2 tbsp
Method
- Chop the chicken, coriander, green chilies, garlic
- In a bowl, mix chicken, coriander, chilies, garlic, salt and soya sauce
- Keep a wide plate/dish with warm water
- Keep a damp cloth napkin
- Lightly grease a baking sheet or tray with baking paper
- Preheat the oven to 180 C
- Now go in a sequence –
- dip the rice sheet in warm water for 10 seconds
- put the sheet on a damp cloth
- put the stuffing at one end of the sheet
- fold the vertical sides inside and then fold the bottom of the sheet and roll it upwards
- place this on the baking sheet, with the folded part at the bottom
- repeat for all the sheets
- Lightly oil the top of the spring rolls
- Bake for 10-12 minutes
- Cut from in between. Serve hot 🙂





Notes
- Cottage cheese in the same quantity can be used for a vegetarian version
- Herb can be of your choice as well, chives and basil are equally flavorful
- Be careful while handling the rice paper sheets. Don’t soak it for more than 10 seconds.
- If you feel that it has not become soft enough to fold, once you keep it on the damp cloth, lightly tap the hard area with wet fingers.
- Don’t worry if it tears, keep folding. The sheet tends to stick quickly, so the roll will be possible anyway.
