Orange Coconut Cake

What do you do when you get haunting dreams of Oranges that no-one is eating at home! Well, I baked an Orange coconut cake 😛

It was my first time that I tried the combination of Orange with Coconut. The citrusy flavor was balanced perfectly by coconut, definitely will be experimenting more with it.

Serves – 8 Time – 1 hour

Ingredients

  1. Butter – ½ cup
  2. Sugar – ½ cup + 1 ½ tbsp
  3. Orange Zest – of 1 orange
  4. Fresh Orange juice – 3 tbsp
  5. Vanilla essence/ Orange extract – ½ tsp
  6. Eggs – 2
  7. Egg yolk – 1
  8. Cake flour – 1 ¼ cup(refer notes)
  9. Baking powder – 1 ½ tsp
  10. Baking soda – ¼ tsp
  11. Salt – 1 pinch
  12. Desiccated coconut/ Flaked coconut – ¼ cup
  13. Thick Curd – ½ cup

Method

  1. Pre-heat the oven at 180 C
  2. In a large bowl, cream together butter, sugar, orange zest, orange juice, vanilla essence, eggs and yolk, beat 2-3 minutes on medium speed
  3. In a bowl sift, flour, baking powder, baking soda & salt
  4. Starting with flour mixture beat half into egg mixture then half the yogurt, then remaining flour and then remaining yogurt, beat on low speed until smooth
  5. Pour in to a prepared cake tin and bake for 30-40 minutes
  6. Once cooled, dust it with sugar and serve

Notes

  1. To make cake flour at home, for every cup of all purpose flour remove 2 tbsp and replace with 2 tbsp of corn-starch, sift together before using it
