What do you do when you get haunting dreams of Oranges that no-one is eating at home! Well, I baked an Orange coconut cake 😛
It was my first time that I tried the combination of Orange with Coconut. The citrusy flavor was balanced perfectly by coconut, definitely will be experimenting more with it.
Serves – 8 Time – 1 hour
Ingredients
- Butter – ½ cup
- Sugar – ½ cup + 1 ½ tbsp
- Orange Zest – of 1 orange
- Fresh Orange juice – 3 tbsp
- Vanilla essence/ Orange extract – ½ tsp
- Eggs – 2
- Egg yolk – 1
- Cake flour – 1 ¼ cup(refer notes)
- Baking powder – 1 ½ tsp
- Baking soda – ¼ tsp
- Salt – 1 pinch
- Desiccated coconut/ Flaked coconut – ¼ cup
- Thick Curd – ½ cup
Method
- Pre-heat the oven at 180 C
- In a large bowl, cream together butter, sugar, orange zest, orange juice, vanilla essence, eggs and yolk, beat 2-3 minutes on medium speed
- In a bowl sift, flour, baking powder, baking soda & salt
- Starting with flour mixture beat half into egg mixture then half the yogurt, then remaining flour and then remaining yogurt, beat on low speed until smooth
- Pour in to a prepared cake tin and bake for 30-40 minutes
- Once cooled, dust it with sugar and serve
Notes
- To make cake flour at home, for every cup of all purpose flour remove 2 tbsp and replace with 2 tbsp of corn-starch, sift together before using it
